Pitched from prior czech pils batch

The OG for this was scheduled to be at 1.074 but I was only able to achive 1.064. Next time I'll be sure to use some extract to make sure I can get my gravity.

On 02.12.05 I boiled 2lbs of extra light DME in 1/2 gallon of water for 45 min. I then toped off with enough water to insure that I had .5 gallons I then racked the beer to a secondary and added the new wort.

counter flow wort chiller

The brewery got a new piece of equipment a few weeks back. It's called a counter flow wort chiller. This gives me the ability to cool the boild wort down to yeast temps a lot quicker and safer than before. It cooled 1 gallon in about 4 min from 180F to 62F. and the wort was in the fermenter with the yeast all ready to go. Before it took 5 - 10 min a gallon to do the same thing. Money well spent.

Czech Pilsner
Last weekend I was back in the brew house. This time making a Czech Pilsner. For those that don't know it Czech pilsner was the first light colored - clear beer. This is the style that became all the rage around the world and if the father to most beers drank today. Budweiser and Miller are the current examples of American bastardizations from this classic style.
